As described by others, it truly is a simple process.  Audacity should be
able to do everything that you need.  (It even has EQ compensation curves
for various flavors of 78s and LPs...though I can't personally vouch for
their accuracy.)  Just record your sides into Audacity (in separate
tracks, if you like), use the copy/paste function to make a whole and save
it as an MP3.  You're all done except for the uploading and that part is
even easier.

If you want to insert commentary, you can record those separately and
cut/paste them where you want them into the main program.  Depending upon
how much time you wish to spend tweaking the production, the finished
product may not be "broadcast quality" (though the standards used to
determine that are plummeting) but it should make a decent podcast.

Have fun...and be aware that you can get yourself trapped in a giant
time-sucking-whirlpool of effort on projects such as these...
