I know this is going to sound like heresy..but they're still making cassettes!
You can get 'em at the dollar store or you can get real perfeshnel ones (the
kind none of us would be caught dead using anymore because those are SO last
millennium) here:

Don't knock a medium that is still usable and incredibly simple to handle for
civilians. Inexpensive cassette recorders may not be easily found, the
portables that sold for $30 should be tossed into the nearest dumpster and
boomboxes are not the answer either, but every Goodwill has shelves full of the
last generation of home audio systems, some of them in decent condition, and a
mike good enough for voice recording can be bought at any music store.

An interesting question! I'm not an expert in this field, so I will
forward your email to a group of people who would be happy to give
you advice. You will definitely want something that makes digital
recordings, and stay away from tape as that is already obsolete.
There is equipment specifically designed for use in the field and
geared towards oral history.

The first question here (it seems to me) would be "Recordings of
your children for what purpose?"
She could want recordings of them speaking (if so, just as an audio
equivalent of snapshots...answering questions...providing audio
histories or commentary, or...), or performing (as musicians...as
actors...as speakers...or...)...and, if performing, in what
setting? Or perhaps recordings to help identify them in case
of...what?!
These would define what sort of miking is needed, as well as the
accuracy/fidelity of the recordings...
